Mono Meals

We tend to overcomplicate tons of things in life, but food should not be complicated! I love eating vegan junk food and I am not ashamed of that. But I do love eating my delicious and healthy whole food plant based meals. One of the easiest way to get tons of nutrients in is to mono meal.

Mono meals are meals where you typically only eat one type of fruit or vegetable in abundance.

Seems too simple to be true. It is fast, easy, and if you're eating your favorite food, delicious! That is my number 1 advice when it comes to trying out mono meals, eat fruit that you love! When you eat foods that aren't satisfying to you we eat less that what we should and you don't want that. If your favorite food is watermelon by all means eat it!

Here are a couple of reason to get mono meals a try!

  • They are easier on your body- mono meals are easier to digest because of its simplicity.
  • Super convenient- you just grab fruit and go! Nothing easier than that.
  • Nutrient dense- talk about getting your bang for your buck. Eating fruits in large amounts will pack you with tons of nutrients
A few of my favorite go to mono meals are

  • Mango nice cream ( just blended frozen mangos)
  • Banana smoothie
  • Dates
  • Half a watermelon
  • Oranges or other citrus

Remember to try to shop in season, not only will the fruit taste so much better but 9 times out of 10 you will mostly likely get a better deal. Don't be afraid to talk to your local market and speak to them about cutting you a lower price if you buy in bulk you will be surprised at how much they can do if you ask.

Now go out there and find your favorite fruit or veggie and eat it! Happy Tuesday!

Louisiana State Cross Country Meet

Yesterday was a blast! We drove all the way to Natchitoches, LA for the state cross country meet being held at Northwestern State University. It rained really heavily for a few days prior, so the course was killer! Even for the spectators it was incredibly muddy. Pecho had an awesome time getting super dirty. So many incredibly talented runners came out on the course. It was great to see the kids having so much fun in the mud. I unfortunately was not prepared to get ankle deep in mud. Haha. I filmed around all day so here is the vlog. Excuse my crazy screaming. Haha. I get really excited.

Happy Thursday everyone!

Dealing with Parents as a Vegan

For many younger vegans living in your parents home may not be ideal when it comes to your lifestyle change. The opposing ideas may bring some unwanted anger in your home. Below is a video that I made addressing these very issues.

  1. Find Resources- by finding valuable and easy to understand resources you are better able to explain your reasoning and your views on veganism. Many parents are concern that their children might not be able to live long and healthy lives with a vegan diet. So by providing them with quality information they might  be able to understand it more clearly.
  2. Be Patient - having patience is crucial in times like this. Many times parents might take it in a  "Oh you think you're smarter than me" kind of way. You must realize that for many it is more of a cultural shock that anything. By understanding that some people need more time that others to understand the incredible impact that a vegan diet can have on the world.
  3. Be Kind- this should go without saying, but by expressing kindness to your parents when speaking about this issue it can make things run much more smoothly. I completely understand that when first discovering the vegan lifestyle many realms of anger unfold because of all that you weren't aware of before but when speaking to others about your change (from my experience) showing kindness can really make people understand your point of view much more clearly.

I have also added a few testimonials from vegans that live in a non vegan home.

Hunter Fontenot, 17, Opelousas, LA

  • What's the hardest thing about living in a non vegan home?
    • "The hardest part about living in a non vegan home is when your parents tell you "You can't be healthy" or saying that you can't get protein or even that it is too expensive to be vegan. When all it takes is a little research to help understand what being vegan means and the benefits that do come with it. There are so many protein rich foods that don't involve animals."
  • What do you do to get though it?
    • "Try to educate your parents or guardians on what being vegan really  means, the fact that killing an animal or multiple isn't the only way to survive, and that the vegan lifestyle doesn't have to cost more than a non vegan one."
  • What's your advice for others?
    • "Don't ever let anyone misinform you on the fact of the food that you eat or the facts of your lifestyle that you choose to live. Educate yourself so that you will be able to educate those who don't understand what vegan even means. You could be the motivation to help someone become vegan. The people that harass you about eating vegan probably don't know the damages that a non vegan lifestyle create."
Summer Johnson, 16, Krotz Springs, LA
  • What's the hardest thing about living in a non vegan home?
    • "Not having someone to encourage me and tell me that I am doing is the right thing and knowing that my parents don't care to hear about how their food is linked to somebody."
  • What do you do to get though it?
    • "I talk to you (Jen) and watch documentaries to validate my feelings to keep me going.
  • What's your advice for others?
    • "Everyone needs a support system, make sure you surround yourself with people who will encourage you. Also people will always try to discourage you, but stick to your guns and don't be pushy, be factual."

Bryan Flores, 14, Opelousas, LA

  • What's the hardest thing about living in a non vegan home?
    • "Just the peer pressure. They (my parents) will sometimes say that meat is good for me and that eating one piece of it won't kill me."
  • What do you do to get through it?
    • "I keep educated on what I believe in. I know that what I am doing is right for the animals and I think about how I am helping them. I talk to people who are vegan and ask them about their experiences. You can learn alot from people who have been vegan longer than you."
  • What's your advice for others?
    • "To think about the animals. You are doing it for them and so no matter what people tell you or if they try to ridicule you for your lifestyle choice you know that what you are doing is right. Keep your head up and finding vegan friends can make the journey much better."

I hope that this was able to help someone who is currently in this situation.

Happy Thursday ya'll!

Doc || Amish: A Secret Life

Just finished a whole slew of documentaries so many many "Doc" will be coming soon. One of the many was  Amish: A Secret Life, a documentary on the true lives of the Amish people. It was a wonderful insight on the simple yet wonderful life that Amish people life. The documentary followed a family (which it is actually against their beliefs to be filmed or photographed, but they agreed to it due to the spreading of their god's word) in their day to day tasks and to show the true meaning of being Amish. It is amazing to see the simplicity of their lifestyles. What fascinated me the most was how they managed to preserve their simplistic lifestyle while still being in proximity with the more "norm" society. I find the peace and minimalism very comforting. A wonderful look on the true Amish life.  Much recommended.

Hope everyone is having an amazing Monday.

Cookin || Super Easy Green Juice

Uploaded an easy green juice video. Take a look! People over complicate green juices when it shouldn't be. You should put whatever it is that YOU like into your juices, that way you are more inclined to drink them.

Happy Friday everyone!

Doc || Genie: Secret of the Wild Child

Just finished watching Genie: Secret of a Wild Child. An amazing documentary on the life of Genie, a girl who spent the younger years of her life in total isolation. Unable to have human contact she had a very primitive mind. For thirteen years of her life she was confined to a small room and had very little to even look at. The issue then was to teach her how to be a thirteen year old girl. She had not developed any "normal" communication skills. She often growled and spat. This story is so tragic in how this young girl was stripped of her ability to learn at a normal rate. I would really recommend this documentary to anyone, but particularly those interested in childhood development. Very insightful work.

Vegan Goodies || VeganEgg

DUDE! Veganegg. Yes indeed. The amazing people from Follow Your Heart created this amazing new product! So with it I created my home's traditional El Salvadorian breakfast with it. It is beyond words. I cannot express how excited I was when I heard that this product was coming out. Before going vegan scrambled eggs was pretty much my go to meal. After realizing the horrors that are behind the egg industry I never had them again. BUT NOW VeganEgg is a game changer. Be sure to check out Follow Your Heart 's Facebook for updates on when it will be out on the market.

Happy Tuesday ya'll!
